The oxidation levels can vary from 8 percent to 80 percent, depending on the production style of the tea master. Oolong teas are also traditionally rolled, twisted, or curled into tight balls or thin strands. Depending on how and when the leaves are rolled, the tea master can subtly alter the entire flavor of the oolong tea.
